People address Dahibara as a portion of street food, but for me, it’s soul food. Dahibara got more fans than any other food. This food is the trademark of the city Cuttack which is located in Odisha. Cuttack and its beauty have always been a discussion. From Rupa Tarakasi which is the silver Filigree work to Barabati Fort, from Dahibara to Barabati stadium, every possible place is the heart of the Cuttackians! Cuttack’s Dahi bara, which is typically a pan-Indian dish, has a distinct flavour and appeals due to the way it, is adorned. This meal, which is served with chutneys and aloo dum and is dipped in buttermilk and dusted with spicy herbs, is a favourite among food enthusiasts throughout Odisha.

RAGHU MAUSA- MAN BEHIND THE MAGICAL DAHI BARA
Dahi (yoghurt) and bara (Rice dumplings) are served with thick potato curry and a ghuguni which has a strikingly distinct combination. The baras are served to soak in a thin, runny Dahi made with chaas (buttermilk) and spices. In a dona, 4-5 pieces are placed and topped with aloo dum and ghuguni. After that, it is finally served with chopped onions, green chillies, coriander leaves and the final is the Sev. From stall to stall, the exact preparation differs. The stall’s timings differ from one seller to the next.
“I’ve been selling Dahi bara aloodum for the past six decades,” Raghu stated in an interview. I used to sell them near Barabati Stadium before. Customers preferred me, which made my fellow merchants envy me. They sought to frame me with bogus accusations of black magic, for which I had to bear a lot of pain although I was innocent. I decided to relocate here and start over.”Right now, his son is running the entire company. The food they provide is incredibly tasty, attracting foodies from all over the world. Raghu’s famous Dahi bara aloo dum attracts visitors from as far as any long distance. They were honoured to be allowed to compete in the Odisha Parba in New Delhi, where they won first place.”
